Taco Salad

I am definitely NOT one of those women that hates salad! I LOVE SALAD! Especially taco salad!

Cheap, easy and yummy! 3 things I can definitely get behind when making a meal! This is just such a great dinner! It’s one I always look forward to eating! Breaking the shell into the salad is my favorite part…..lol. I enjoy when there are doritos to top it off too, but I was trying to save some calories…..you know, for cake! But you can definitely add some to yours if you want! If you are super pressed for time you can always get the remade shells too!

Ingredients:

3-4 Taco shells, burrito size

1 1/2-2 lbs ground beef

2 tbsp cumin

2 tsp cayenne

2 tsp paprika

2 tsp garlic powder

2 tsp onion powder

salt and pepper to taste

5-6 Cups Romaine Lettuce (this just depends on how much you want in each bowl.)

2 cups diced tomatoes

1 cup onions, diced

2 cups shredded cheddar

guacamole, optional

sour cream, optional

salsa, optional

Directions:

Preheat the oven to 350°.

To get a bowl shape tortilla, we used non stick foil. Shaped the foil like a bowl and placed the tortilla over top and baked. (We tried using the bowl method but even with spray they still stuck.)

Bake the shells for about 15 minutes or until lightly golden brown. Once cooked, set aside to cool.

Cook beef in skillet on medium high until no pink remains. Drain the grease.

Return the meat to the skillet and add in all the spices and 1/2 cup water simmer meat on low for 10 minutes.

Place lettuce into cooled taco bowls and top with cooked ground beef, tomatoes, onions, cheese, salsa, sour cream and guacamole.
