Tiramisu meets cheesecake………HEAVENLY! Tiramisu is such a light dessert and cheesecake is on the heavier side. But this is the perfect combo! So light and creamy and it just melts in your mouth. I am a big coffee lover and this just has so much flavor and zing! It’s probably my family’s new favorite dessert! They love the Tiramisu that I normally make, which is the traditional lady fingers dipped in coffee and kailua, which this recipe has too, and a mascarpone/cream cheese like pudding. So mixing tiramisu and cheesecake was just like a flavor explosion!
1 1/4 cup vanilla wafer crumbs
1/4 cup butter, melted
1 1/2 tbsp sugar
Ingredients Cheesecake Filling:
8 oz cream cheese, softened
16 oz mascarpone cheese, softened
1/4 cup sugar
1 cup heavy whipping cream
1/2 cup powdered sugar
2 tsp vanilla
Ingredients for Ladyfinger Crust:
3 tbsp warm water
2 tbsp espresso powder
1 cup Kahlua
Ingredients for whipped cream:
1 cup heavy cream
1/4 cup Kahlua
10 tbsp powdered sugar
cocoa powder for dusting and chocolate chips
Preheat oven to 325°.
Grease 9″ springform pan, both bottom and sides.
Mix together the crust ingredients until well combined. Press the mixture into the bottom of the springform pan.
Bake crust for 10 minutes or until lightly browning. Set aside to cool.
To make filling, mix cream cheese, mascarpone and sugar together on low speed until well combined. DO NOT OVERMIX.
In a separate mixing bowl, add heavy cream powdered sugar and vanilla extract. Whip on high speed until stiff peaks form.
Slowly fold the whipped cream into the cream cheese mixture, set aside.
Combine the warm water and espresso powder in a small bowl. Add Kahlua.
Dip each lady finger into the Kahlua mixture, then press to the side of the spring form pan (so they are upright.)
Spread mascarpone on top of the nilla wafer crust and up the sides of the ladyfingers. Then set in fridge for 6 hours or overnight.
Once cheesecake has set in the fridge, make the Kahlua whipped cream.
Add heavy whipping cream, Kahlua and powdered sugar to a mixing bowl. Whip on high speed until stiff peaks form.
Top cheesecake with whipped cream and dust with cocoa powder then sprinkle with chocolate chips.
