Crustless Broccoli Spinach Quiche

I am not really a breakfast person, especially when breakfast is eating before 10am! That’s why I love the weekend because we can eat breakfast after my brain has gad time to wake up and i have had at least ONE cup of coffee! We love late breakfasts in my house, especially because everyone enjoys a little more time to sleep or lounge in their warm beds.

This has become my new favorite weekend breakfast! It’s extremely easy to make and really doesn’t take much time. This is something anyone could make. There really is no way to mess it up! And it’s also waistline friendly if you are watching your carbs. It’s a nice hearty breakfast or even brunch, that will keep you fueled up for awhile. It’s packed with fresh veggies and hearty eggs and bacon. And of course cheese! It just melts in your mouth! So so good! 1/2 onion diced

2 cups of broccoli diced

4 cups fresh spinach

2 cups cheddar cheese, shredded

10 eggs, beaten

6 strips of bacon, cooked and chopped

1-2 tbsp olive oil


Spray 9 inch pie pan with cooking spray.

Heat oil in skillet over medium heat and then add in onions and cook until slightly softened.

Add in broccoli and spinach and cook for about 10 minutes.

Mix in eggs, cheese and bacon. Then pour into prepared pie dish.

Bake at 350° for 40-45 minutes or until knife inserted into the center comes out clean.
