Insta Pot Buffalo Chicken Quesadillas

So, I love making Quesadillas, any kind! Beef, chicken, cheese, you name it! Anything that is pressed between flour tortillas with gooey melted cheese is deliciousness! But this one! OH MY LANTA! These are little pieces of heaven! They are one of the nest quesadillas I have ever made! The buffalo chicken, the melted cheese and the crispy outer shells……..mmmmmm mmmmm mmmmm! You CANNOT beat it! And really they are pretty easy to make. Having the insta pot has really cut the cooking time in half! And saving time while making something that would normally take a bit longer, is great! I can make this dish even on our busy weeknights!

These aren’t just great for a quick easy dinner, they are great for parties! But of you do make it for a special occasion or party, make sure you double it! They will go fast!


3 boneless skinless chicken breasts

1/2 cup chicken stock

1 tbsp butter

1 cup buffalo sauce

large tortilla shells

1-2 cups shredded queso cheese


Place chicken and chicken stock in insta pot.

Cook on high pressure for 20 minutes. Once chicken is done let pressure release slowly for 5 minutes then use quick release.

Mix melted butter and buffalo sauce and set aside.

Shred chicken and drain juice from insta pot, then turn insta pot to sautée and return chicken back to the pot.

Add in buffalo sauce.

Cook for 10 minutes.

Heat skillet or griddle on medium high.

Place one tortilla down on heated skillet.

Then sprinkle cheese on tortilla and top with the shredded buffalo chicken. Top with a little more cheese and another tortilla shell.

Cook for 2-3 minutes then flip and cook for another 2-3 minutes or until cheese is melted and tortillas are turning golden brown.

Cut into triangles!
