I love the weekends because you can always make a yummy breakfast for your family. Every weekend we enjoy a home cooked breakfast that we usually don’t get to enjoy during the week. We can barely make it out of the house let alone make a big breakfast! I’m sure all you parents know exactly what I am talking about! But this really isn’t even that hard of a breakfast to make but definitely something to savor and enjoy on the weekends when you have a little more time and more coffee!
These waffles are perfect for a chilly fall morning! Fluffy and full of pumpkin flavor! Topped with rich creamy cinnamon icing! They just melt right in your mouth! Next time you have a weekend to just lounge around, give these a try! They will make the perfect start to your weekend!
Ingredients for Waffles:
2 cups of flour
1 1/2 cups milk
1/2 cup vegetable oil
2 tbsp sugar
4 tsp baking powder
1/4 tsp salt
1/2 tsp vanilla
1/4 to 1/2 cup of pureed pumpkin
1 tsp cinnamon
Preheat your waffle iron.
Beat the eggs (with hand mixer or by hand with whisk) until light and fluffy.
Then beat in flour, milk, oil, sugar, baking powder, salt and vanilla. Don’t over mix, beat just until smooth.
Add in pumpkin and cinnamon and stir in with a spoon or whisk. Mix until well incorporated.
Pour about 1 cup of batter on waffle iron and cook until golden brown. Top with cream cheese drizzle and whipped cream (optional).
Ingredients for cream cheese Drizzle:
4 oz cream cheese (softened)
1/2 cup powdered sugar
1 tsp vanilla
3-4 tbsp milk
1 tsp cinnamon
Beat cream cheese until smooth and creamy.
Add in powdered sugar, vanilla, cinnamon and milk. Mix well. Add more milk to get the consistency you want. I added only about 3 tbsp because I didn’t want mine to be super runny.
