Biscuits and Gravy

 

 

 

My hubby has family that is from the South, so he grew up eating lots of southern comfort foods.  One of his favorite things is Biscuits and gravy.  I never ever had them until I met him!  Crazy, right?!? I really didn’t know what I was missing!  So, one day I looked up how to make them and decided to give it a go.  I did change some things here and there with my recipe.  Typically, they are made with bacon grease.  I wanted to cut out some of the unnecessary calories.  I was a tad worried because maybe my hubby wasn’t going to like them as much as he loved his Grandmas’s (who definitely used the bacon grease method).  But he loved them!  My boys (one of which is a very VERY picky eater) absolutely loves them too!

I know most people think that this is a super hard recipe that takes tons of time and it’s easier to use ready made biscuits…..but it’s not its super simple and doesn’t take much time at all!  You will be glad you took the extra 10 minutes to make your own biscuits!  It makes all the difference in the world!  The biscuits are tender and melt in your mouth.  Top them with this creamy, meaty, flavorful gravy and its a winner!  Plus, I don’t pour out all the flavor from the sausage rendering!  So, it’s packed with great flavor and it’s less fattening!

 

Ingredients for biscuits:

3 cups flour

2 tbsp sugar

2 1/2 tsp baking powder

1/2 tsp salt

1/2 tsp baking soda

1/2 cup vegetable shortening

1 cup buttermilk

1/4 cup melted butter

 

Ingredients for Gravy:

16 oz Bob Evan’s breakfast sausage, ground (I use the one that comes in the long pack)

1/4 cup flour

1 cup milk

1/2 cup cream

salt and pepper to taste

 

 

Directions for biscuits:

In a medium bowl, combine flour, sugar, baking powder, baking soda and salt.

Cut in shortening with fork or pastry cutter, until pieces look like corn meal.

Slowly add buttermilk, stirring until well mixed.

Turn dough out onto lightly floured surface and knead dough lightly 2-3 times.  Roll outwit rolling pin to 1/2 inch thickness.  Cut into 2 inch discs using a biscuit cutter or rim of glass.  (you can make them bigger or smaller, but the cooking time will vary depending on the size you make.)

Place biscuits on pan that is lined with silicone baking make or sprayed with non stick cooking spray.

Brush biscuits with half of the melted butter then bake for 14 minutes or until golden brown.  Then brush the biscuits with the rest of the butter.

Directions for the Gravy:

Cook ground sausage in skillet on medium heat, until thoroughly cooked.

Stir in flour and cook for additional minute.

Add in milk and cream and cook on medium heat until gravy starts to thicken, then reduce heat to low and add salt and pepper.  Cook for 5 minutes.

Pour gravy over biscuits and enjoy!!!!
