I guess you can say that fast food is pretty much a major food staple in today’s times! Everyone is so busy and has full schedules, with work, school and all the extra activities you have to cart your kids to and from! And sometimes it’s just so easy to hit the drive through, believe me! But sometimes that food isn’t the greatest…..not in the health department and sometimes not even the flavor department! My hubby and I have sworn off all the major fast food chains, like McDonalds and Burger king, Wendy’s and Taco Bell. They don’t sit well with us and most of the time they are gross! Our kids have NEVER been to any of these places. I’m sure there will come a day when they will try it and we could hope they see how nasty they are and continue to steer clear of those places.
With that being said, we do have a couple fast food places we do like and our favorite one is Chick-Fil-A! It’s always clean, the food is always good, not super greasy, not plastic looking and definitely not super expensive. Plus, we love the fact that it’s a Christian owned and operated business. They put God first and center that around their customers. So you always get good, kind service with awesome food.
My hubby swears by the chicken sandwich…..spicy or not! He loves them! And they are pretty good! He was craving a big ol’ juicy Chick-Fil-A sammich one night and we decided, hey lets make our own. We researched a little about the recipes that Chick-Fil-A uses and tweaked it to make it our own. It came out PERFECT! Crispy, spicy, juicy and packed with that awesome chick-fil-a flavor! My hubby was in chicken sandwich heaven!
Instead of ordering at the drive through tonight, make your own fast food! Sure, it’s not as fast and you still have to clean up, but you will have extra calories to spare for dessert……and who doesn’t like dessert?!?
2-3 boneless skinless chicken breasts, sliced in half
green leaf lettuce
dill pickle slices
1 cup dill pickle juice
1 1/2 cups milk
1 cup peanut oil
1/2 cup flour
1 tbsp confectioner sugar
2 tsp cayenne
2 tsp chipotle chili powder
1 tsp salt
1 tsp pepper
2 jalapeños, chopped
Chipotle Mayo (optional)
1/4 cup mayo
2 tsp chipotle chili powder
To cut chicken, place on cutting board and place your hand on top of chicken and carefully slice chicken in half horizontally.
In a large baggy, combine chicken, pickle juice, 1/2 cup milk and chopped jalapeños. Marinate chicken in the fridge for 30-60 minutes.
Heat peanut oil in a large skillet over medium high heat. Heat oil to 375°.
In a large bowl, combine confectioner sugar, flour, cayenne pepper, chipotle chili powder and salt and pepper.
Mix remaining cup of milk and egg together in medium bowl.
Working in batches, dredge chicken in flour mixture then in egg mixture then in flour mixture again.
Cook chicken in oil for about 8-10 minutes until the chicken is crispy and golden brown.
Transfer to paper towel lined plate.
Serve chicken on buns with lettuce, pickle and tomato.
Chipotle mayo is opcional if you wanted more spice.
