Mom’s Chicken Parm


There is something so comforting about a crispy piece of chicken smothered in cheese and sauce!  This takes me right back to my childhood……back to a time when stuff was easier and you came home to a clean house and dinner filling the air!  I miss those days.  I pray my own children will look back on their childhood when they catch a whiff of something familiar or when their own spouses make a familiar, comforting dinner.

I can still smell my mom’s kitchen when she would make this!  I can still taste it!  That’s why I had to make my own version of it!  It’s pretty much the same, I just use a different sauce and cheese.  The same love is still there.

I love how easy this is too!  Time consuming, yes, but super easy!  Just make a deal with the hubby that he has clean up duty! 😉



1 1/2 lbs boneless skinless chicken breasts, thin

3/4 cup Italian bread crumbs

2 eggs, beaten

1/4 cup grated parmesan

1/2 cup olive oil

salt and pepper to taste

3-4 cups pasta sauce (or as we call it in my house, gravy)

5-6 slices of fresh mozzarella cheese, thinly sliced or you can use shredded



Salt and pepper each piece of chicken on each side.

Heat oil in skillet over medium high heat.

Mix bread crumbs and grated parmesan together.

Dip chicken in egg mixture then in bread crumb mixture.

Cook chicken on each side for 6-8 minutes or until crispy and golden brown.  Then place chicken on paper towel so any excess oil is drained off.

Spread 3-4 tablespoons of sauce on the bottom of a baking dish.  Place chicken on top of the sauce.  Top chicken with a cup to 2 cups of sauce (I like my chicken to be crispy, so I don’t use as much sauce, I use the sauce top the pasta and then put my chicken on top of that, but you can use more or less, however you prefer it =) )

Bake for 30 minutes or until cheese is melted.

Serve on top of pasta or by itself with a veggie!
