It’s no surprise that one of my favorite foods is chocolate! All kinds and in almost anything! I mean, chocolate covered bacon, YUM! SO, yeah I could probably put chocolate on or in anything! So it was a matter of time before it made itself into my banana bread. Banana bread is good on it’s own so adding chocolate just makes it heavenly! This is such a great recipe and through the years I tweaked it to make it even more moist and more like a cake (I hate using the word moist, but sometimes its unavoidable ;)). It’s the perfect amount of sweet with a hint of fresh banana and chocolatey goodness! It pairs perfect with a nice hot cup of coffee or tea. My hubby and I have enjoyed many choconana cakes with a cup of joe after long days! Probably too many! 😉
1/2 cup butter, softened
1 cup brown sugar
4 bananas, mashed
1 1/2 cups flour
1 tsp baking soda
1/2 cup cocoa powder
1/2 tsp salt
1/2 tsp vanilla
1 cup chocolate chips
Preheat oven to 350°.
Cream butter and sugar together.
Add eggs and mashed bananas. Combine well.
Sift together flour, cocoa powder, baking soda and salt.
Slowly add flour mixture to banana mixture. Mix until just combined.
Stir in vanilla and 3/4 cup of chocolate chips (reserve 1/4 chocolate chips for the top of the bread.)
Fill greased loaf pan with mixture and top with 1/4 cup of chocolate chips.
Bake at 350° for about 55 minutes or until toothpick inserted into the center of the bread comes out clean.
