Spinach Artichoke Dip



Everyone has their favorite go to appetizer for parties and get togethers……THIS is mine!  Every single get together I have, I make this!  Christmas party, moms night in events, Super Bowl and sometimes I just make it to enjoy when one of our favorite show returns!  It’s so good!  It’s packed with so much flavor!  I use fresh spinach, rather than canned or frozen because it’s so much better and tastes so much fresher!  You just cook it up on the stove with a little olive oil and then once it’s cooked (it will cook down a lot) I just press it against the side of the pan with my wooden spoon and drain as much of the liquid as I can.

I love this dip so much!  It’s so simple to make!  It’s cheesy and creamy and its perfect served with crunch bread crisps or pretzel thins and of course a nice glass of Vino!

Make this at your next get together and people will be begging you to make it everytime!  It’s kind of expected when people come over!  And it’s the first thing people dive into!  =)



2 cups parmesan cheese

1-2 bags fresh spinach, cooked and squeezed of excess liquid

1 (14oz) can artichoke hearts, drained and chopped

2/3 cup sour cream

1 cup cream cheese, slightly softened

1/3 cup mayonnaise

2 tsp garlic, minced


Preheat oven to 375°.

Mix together the parmesan cheese, spinach and artichoke hearts.

Combine remaining ingredients and mix with spinach mixture.

Bake 20-30 minutes.

Serve with toasted bread or pretzel thins.
