Hot Cocoa Cupcakes!

Polar Express is another Weber family Christmas time favorite!  This is probably my kiddos favorite movie!  It’s so magical and fun!  Every year they must watch it about 50 times!  My hubby even put it on during our wrapping extravaganza on Christmas Eve.  It’s just such a perfect Christmas movie!

Whenever I think of Polar Express, I always think of HOT COCOA!  Who can forget the hot chocolate song?!?

These hot cocoa cupcakes are the perfect compliment to this movie!  The rich chocolatey flavor and sweet cocoa cream cheese frosting is the perfect accent to enhance these cupcakes!  It’s like having hot cocoa in a cupcake!  How does that get any more perfect?

These are super easy to make and it’s a great way to be festive without making something time consuming and difficult.  Gibe these a try and you will be glad you did!  And so will your kiddos!



1/2 cup butter, softened

1/4 cup cocoa powder

1 1/4 cup cake flour

1 tsp baking soda

1 tsp baking powder

2 eggs

1/2 cup hot cocoa mix

1/4 cup sugar

1/2 cup milk



Preheat oven to 350°.

Combine butter, cocoa, cake flour, baking soda, baking powder, eggs, hot cocoa mix, sugar and milk.

Mix well and until thoroughly combined.

Pour batter into prepared cupcake tins.  Fill each 2/3 way full.

Bake about 20 minutes or until tooth pick inserted comes out clean.

remove from oven and place cupcakes on wire rack to cool.

Ingredients Frosting:

8 oz cream cheese softened

1 cup of marshmallow cream

1/2 cup powdered sugar

mini marshmallows

candy canes



Mix cream cheese, marshmallow cream, powdered sugar and hot cocoa mix on low to medium speed until thoroughly combined and fluffy.


To assemble cupcakes:

Pipe frosting onto cupcakes and top with marshmallows.

To make the flags I just cut construction paper in the shape of a flag (one white and one red) and glued the two colors together.  Then I wrote North Pole (you can print the flags too) and I just stuck the flag to the candy cane by wetting my finger slightly and dabbing the candy cane, then carefully placing the paper flag.  Then carefully placing the candy cane into the center of the cupcake.
