One of my favorite snacks, NOT just in the fall, but year round…..caramel apples! I love to cut up some fresh crisp apples and dip them generously into sweet warm caramel! Sooo good!
I am always trying to find new cookies to make and I wanted to incorporate caramel apples into a cookie…..and boom! Caramel apple cookies!
These are so so good! They will just melt in your mouth! And who says caramel apples are just for fall? You can make these anytime of the year!
1 cup butter (2 sticks), softened
1 cup sugar
1 cup brown sugar
2 tsp vanilla
3 cups flour
1 tsp baking soda
2 tsp hot water
1/2 tsp salt
1 cup caramel chips
1 cup apple, peeled and diced small
Preheat oven to 350°.
Cream butter, then add sugars and cream well.
Beat in eggs singly.
Stir in vanilla.
Dissolve baking soda in hot water and add to batter.
Add salt, flour, caramel chips and apple. Mix well.
Drop by rounded tbsp onto ungreased cookie sheet.
Bake for 20 minutes or until edges are slightly browned. Cookies may look doughy in the middle, that’s ok because they will set more as they cool.
Let cookies cool on sheet for 2 minutes then transfer to wire cooling rack.
Store cookies in air tight container for up to 5-7 days.
