My favorite time of year is fall. I love all the colors, pumpkins, pumpkin flavored everything, cool nights and hayrides, Halloween, spooky stories, wearing hoodies! Just everything about Fall! But one of my favorite things is ‘The Walking Dead’! My hubby and I have been watching since the very first day it started, back on Halloween night in 2010. It’s our absolute FAVORITE show! It’s become our fall ritual.
I knew I had to make something that was ‘Walking Dead’ inspired! We are (like I mentioned before) crazy into Halloween! We deck out our house with zombies and a graveyard, lots of skeletons and even a grim reaper! It’s amazing! And every year we have a HUGE halloween party! Lots of food and fun! I wanted to make something a little different this year for our party, so I came up with these Negan inspired cupcakes!
These truly aren’t hard to make, time consuming, but easy! And super festive for the upcoming Halloween season!
These would make the perfect addition to your ‘Walking Dead’ party or Halloween party! It’s oozing with flavor and bloody fun! They are almost too gross to eat! Don’t let the gross exterior fool you! Delicate white cupcakes, filled with a sweet strawberry sauce and topped with a light buttercream icing. EVERY bite is Heavenly!
In the words of Negan “Lucille is thirsty. She is a vampire bat!”
My hubby and I had a little fun and decided to open up the cupcake and spill out the insides! Lucille smashed through! She was Thirsty!!!!
HAPPY HALLOWEEN! ENJOY!!!!
1 1/2 cups of all purpose flour
1 1/2 cups of cake flour
1 tbsp baking powder
1 cup of milk
1 cup of butter, softened
1 tsp vanilla
5 egg whites, room temperature for 30 min
Preheat oven to 350° and line cupcake pan with liners, I use foil cupcake liners.
In a small bowl mix milk and vanilla, set aside.
In a medium bowl, beat butter until creamy. Add sugar and mix until light and fluffy.
Mix flour and baking powder, in separate bowl.
Now add flour mixture to butter mixture, alternating with milk mixture, beginning and ending with flour. Mix well, set aside.
Beat egg whites until stiff peaks form. Gently fold into cake batter.
Fill each cupcake liner 2/3 full. DO NOT OVER FILL.
Bake cupcakes for 30 minutes or until toothpick inserted comes out clean.
Let cool in pan for 5 minutes, then remove and allow cupcakes to finish cooling on wire racks.
While cupcakes are cooling make strawberry filling.
Ingredients Strawberry filling:
2 1/2 cups chopped strawberries
1/2 cup sugar
2 1/2 tbsp cornstarch
Mix all ingredients in heavy bottom sauce pan, bring ingredients to a boil and stir constantly.
Using masher, mash up strawberries until sauce thickens.
Continue boiling for 2 minutes, while stirring.
Remove from heat and allow to cool completely.
*You can make this ahead of time and store in the fridge for 2 days.*
1/2 cup butter, softened
1/2 tsp vanilla
2 cups powdered sugar
2 tbsp milk
Cream butter until fluffy, then gradually beat in sugar until fully incorporated.
Beat in vanilla.
Pour in milk and beat for 3-4 minutes.
Ingredients for Blood:
2-3 tbsp corn syrup (light)
1 tsp corn starch
4 drips of red food coloring
1 drip of blue food coloring
Mix all ingredients together. Add more to adjust to the consistency you desire.
To assemble cupcakes:
Once cupcakes have cooled, create a hole in the center of the cupcake. I used a cupcake corer, which you can purchase on Amazon. But you can also use the back end of a piping tip.
Fill each cupcake with about 2 tsp of the strawberry filling.
Pipe on frosting.
Now take a tsp of ‘blood’ and pour it in the middle of the cupcake. It will run down the sides like blood. Then take your spoon and lightly splatter the remains ‘blood’ onto the cupcake.
To create ‘Lucille’ I just purchased small bats on amazon and then burnt off the fuzz of a couple pipe cleaners (be careful when burning off the pipe cleaners) then I just cut a small piece off the wire pipe cleaner and wrapped it around the tip of the bat.
Place your bat in the center of the cupcake!
