BBQ Chicken Pizza

 

If there is one thing my hubby knows how to make, it’s PIZZA!  It’s kind of his thing!  I am usually the one that will cook or make the toppings (if there is bacon, chicken, cooked veggies etc) and my hubs will make the yummy dough and sometimes even his own sauce.  He has been making pizza over 5 years now and he’s tweaked his dough to crispy, airy perfection!  It’s amazing!  It’s so much better than most of the local pizza joints and the best part, it’s so much cheaper!  Plus we can make it however we want!  And when you have picky kiddos they pick their own toppings too!  No extra money needed!

This is one of my favorite pizzas!  You don’t find too many places that have BBQ pizza.  The sweet and spicy BBQ sauce, crispy bacon, smokey chicken and perfect crust, mmmm mmmm it’s the perfect start or end to the weekend!  It will be the star of any party and it’s sure to impress any dinner guests you have!  My hubby also makes his own top secret BBQ!  Maybe just maybe we can let that cat out of the bag sometime….;)

So, hang up the phone and pick up your rolling pin!  Make your own pizzeria style pizza tonight!  You won’t be disappointed!!!!!

 

Ingredients Crust:

1-2 Cups of warm water

3 TBSP olive oil

1 tsp salt

2 tsp sugar

1 1/4 oz packet dry active yeast (We use Fleischmann’s)

2 cups flour

Directions for making crust:

Mix 1 cup flour yeast and 1 cup of warm water, mix for 2 minutes with stand mixer, using the dough hook attachment, or mix with hands if you don’t have a mixer.

Then mix in salt, sugar, olive oil, 1 cup flour and slowly add warm water until you get a slightly sticky consistency.  But not too sticky where it sticks to your hands.

Knead dough for 5-10 minutes, by hand or with mixer.

Cover and let dough rise 1-2 hours.

Ingredients for pizza:

3/4 cup BBQ sauce

1/2 cup smoked provolone

2 cups mozzarella

5 strips of bacon, cooked and chopped

1 boneless skinless chicken breasts, cooked and cut in small chunks

3 scallions chopped

 

To assemble pizza:

Preheat oven to 425°.

Flour a clean surface and flatten dough by hand or with a roller.  Roll dough out so that it’s a 1/2 to 1 inch larger than the stone or pan it’s going to cook on.

Spread your BBQ sauce on the dough and sprinkle on your cheeses.

Then sprinkle on bacon pieces and chicken.

Fold up the extra dough to create crust.

Bake for 30 minutes or until cheese is browning and bubbly and bottom is browning.

Sprinkle on your chopped chives.
