Blueberry Muffin Bread French Toast

 

If there is one thing I know mom’s DO NOT want to do on Mother’s Day, it’s COOK!  So SURPRISE her with this sweet little gem!

Mom’s love eating something tasty….especially when they DIDN’T have to cook it!

This is such a great easy recipe, so even if you aren’t the greatest cook in the world you can still wow someone with it!  I just decided to take my blueberry muffing bread and turn it into french toast!  French toast alone is awesome, this just kicks it up a few notches!

This would make the perfect breakfast in bed!

So get your mom some flowers, pour her a nice hot cup of coffee and serve up this sweet treat!

Ingredients for Blueberry bread:

2 cups of flour

2 tsp baking powder

1/2 cup of sugar

1 stick of butter, melted

1 egg

3/4 cup of milk

1 1/2 cups of blueberries

brown sugar for sprinkling on top of the bread

Ingredients for egg wash mixture:

2 eggs

2 tsp cinnamon

1/2 cup milk

1 tsp vanilla

 

Directions:

Preheat oven to 350°

Grease a loaf pan.

In a large bowl, combine the flour, baking powder and sugar.  In another bowl, combine the butter, egg and milk, mix well.

Pour the wet ingredients into the flour mixture and mix until just combined.  Don’t over mix.  Batter may be lumpy and that is ok.

Gently fold in the blueberries to the batter.

Fill the loaf pan with the batter (or you could split it between two pans, depending on how big you want your bread to be.  With this specific recipe (french toast) I split it between 2 pans, it just makes smaller loaves.)

Bake for about 20 minutes and remove pan(s) from the oven.  Sprinkle the brown sugar on top of the bread (I used about 2 tbsp 1 tbsp each if your using 2 pans).  Then return the bread back to the oven and bake for an additional 30-35 minutes, or until a toothpick inserted into the middle comes out clean.

Let bread cool in loaf pan(s) for 1-2 hours and then carefully remove from pans.

Slice bread as thin or thick as you like (I sliced mine about 1 1/2 – 2 inches thick).

Then place your bread slices into the freezer (this allows the slices to freeze a little so when you put them in the egg wash and fry them they don’t crumble) freeze for about 30 minutes.

While your bread is in the freezer, mix together your eggs, milk, cinnamon and vanilla.

Heat skillet on medium heat and add the butter.  Once the butter has melted remove the bread from the freezer.

Dip each piece of bread in egg mixture then place in heated skillet.  Cook on each side for 3-5 minutes or until deep golden brown.

Top with syrup, powdered sugar or fresh whipped cream.
