1/4 packet of yeast
1/2 cup warm water
1/2 cup warm milk
1/4 cup sugar
1/3 cup butter, melted
1 tsp salt
4 cups of flour
1 stick of melted butter
3/4 cup sugar
2 tbsp ground cinnamon
2 tbsp unsweetened cocoa powder
1/2 cup of graham cracker crumbs
1 8 oz container of mascarpone cheese or 1 8 oz package of cream cheese, softened
1 stick of butter, softened
1 tsp vanilla
2 cups of powdered sugar
half a jar of 7 or 8 oz marshmallow creme
1/4 cup of milk chocolate chips
1 tsp shortening
In a small bowl dissolve yeast in warm water.
In a large bowl mix sugar, melted butter, salt and egg. Mix well. Then add in 2 cups of flour and mix until well combined and smooth. Then add in your yeast. Add in remaining 2 cups of flour. Mix until dough can be handled easily.
Knead dough on lightly floured surface for about 5 minutes (dough will not be sticky.)
Place dough in a greased bowl and cover. Let it sit and rise for about 1 1/2 hours. It will double in size.
Once the dough has doubled, punch dough down.
Coat the bottom of a baking dish with butter and lightly sprinkle with sugar.
Mix cinnamon, sugar and cocoa powder together.
Roll the dough out onto a lightly floured surface. Roll it into a 15X9 rectangle. It may not be an exact rectangle and that’s ok.
Once you have rolled out the dough spread the melted butter onto the dough. (It will run off some, that’s ok. The dough won’t get soggy or stick. If there is a lot of run off just blot it with a paper towel.)
Sprinkle dough with cinnamon mixture. Then sprinkle the graham cracker crumbs all over too.
To roll up your dough start at the 15 inch side. Carefully, roll up dough and make sure to keep it as tight as you can when rolling it up. Pinch the edge together to seal it.
Preheat oven to 350°.
Cut into about 12 slices. Place the rolls close together in the prepared baking dish and let the rolls rise for 45 minutes.
Once the rolls have doubled in size (about 45 minutes) bake for 30 minutes or until slightly browned.
Let the rolls cool for 10 minutes.
While the rolls are cooling make your frosting.
Beat together butter and cream cheese. Beat until creamy.
Add in vanilla, mix well.
Slowly add in powdered sugar, add in 1 cup at a time. Mix well, about 2 minutes on medium speed.
Add in marshmallow creme. Beat well until creamy. Set aside.
In a separate bowl, mix chocolate chips and shortening. Heat in microwave at 15 second intervals, stirring each time until melted and smooth and slightly runny.
Once the Cinnamon rolls have cooled for about 10 minutes spread the frosting all over the rolls then drizzle chocolate all over the top of the cinnamon rolls and frosting.
