Who loves those yummy pretzels that you can get from the mall? You know the ones I’m talking about….with the butter slathered on them and the yummy cheese dipping sauce! My mouth waters just thinking about it!
I was actually craving them a few weeks ago! But who wants to go to the mall during flu season? Not me! And if I go to the mall I will end up buying stuff I don’t need. So a trip for pretzels turns into a shopping spree, good for me, bad for my wallet!
So, I decided to make these myself! It’s super easy and they taste just as good!
2 Cups of flour
1 packet 1/4 oz Fleischmann’s active dry yeast
2 tsp sugar
1/2 tsp baking powder
1 tsp salt
3 tbsp olive oil
1-2 Cups of warm water
1/3 Cups baking soda
1/4 Cup butter
Mix 1 cup flour, yeast and 1 cup warm water, mix for 2 minutes with a stand mixer, using the dough hook attachment or mix with hands if you don’t have a mixer.
Then mix in salt, sugar, baking powder, olive oil, 1 cup flour and slowly add warm water until you get a slightly sticky consistency but not too sticky, when the dough sticks to your hands.
Knead dough for 5-10 minutes, by hand or with mixer.
Cover and let dough rise 1-2 hours.
Once the dough is ready preheat the oven to 410° and line a baking sheet with baking mats or line it with parchment paper.(Spray parchment paper with cooking spray if using the paper instead of the mats.)
Meanwhile, place a large stock pot filled with water on the stove and bring it to a boil.
While water is heating roll the dough into small balls (the size of a golf ball) don’t make them too big because they will expand when boiled.
Once the water is boiling, turn water down to medium and slowly pour in 1/3 cup of baking soda (it will sizzle and bubble)
Drop in your pretzels about 5 per batch, and let them boil for about 30 seconds. Remove and place on paper towel to drain. Pat off any excess water.
Place pretzel bites on prepared baking sheet and brush with melted butter. Sprinkle with coarse sea salt.
Bake in preheated oven for 10 minutes or until bites have a golden dark brown color.
Serve with Jalapeño cheese sauce.
Cheese Sauce Ingredients:
1 Jalapeño seeded and minced
3 strips of bacon, cooked and crumbled
4 tbsp butter
3 cups of shredded cheddar
4 oz cream cheese
1/2 cup milk
Melt butter, stir in milk, stirring constantly.
When milk is hot add in cheeses and continue stirring until cheese is melted and smooth (about 10 minutes).
Once cheese is melted add in jalapeños and bacon.
Serve with pretzel bites.
