Tortellini Soup

Let me just say that this soup is AWESOME!

One….because it’s super easy to make, and I mean super easy!  Cooking doesn’t get much easier, unless you have someone else do the cooking for you.

Two….it doesn’t take long to make or cook!  Let’s face it, we all love the kind of recipes that don’t take hours to prepare and cook, especially during the week!  We NEED fast!

Three….it’s pretty healthy, not loaded with a lot of fat or empty calories!  It’s fresh and light!  You won’t feel guilty about eating a bowl of this soup.

So, there you have it!  The perfect weeknight meal!  Easy, fast and oh so yummy!

This will definitely be a meal you will return to week after week!


1 32 oz carton of chicken stock

1 9 oz package of tortellini (I used RANA)

1 package of grape or cherry tomatoes, sliced in half

3 tbsp pesto (you can find this in the tomato sauce aisle)

3 tbsp sun-dried tomatoes in oil, chopped

1/4 cup heavy cream

salt and pepper to taste

dried basil for garnish


Bring the chicken stock to a boil using a large to medium pan.

Add your tortellini, reduce heat to low to simmer and cook for about 7 minutes or until pasta is almost tender.  Add in the tomatoes and cook until tomatoes are slightly softened, about 3-5 minutes. Stir in pesto, sun dried tomatoes and cream.

Salt and pepper to taste.

Ladle into bowls and enjoy with a nice crunchy piece of bread.
