Cherry Cheesecake Brownies


Brownies and Cheesecake……..what could be better than that?!?  I love brownies, they are such an easy sweet treat to make.  I made these as a little surprise for my family a little while back and they just raved about them!  I had an extra can of pie filling that I couldn’t seem to find a use for!  So, I decided to put that right on top of the brownies!  (I only put in half of the can because I think by using the whole can it would be to oversaturated and not cook as evenly.)  OMG!  It’s soooooo good! I wasn’t sure how fruit on top of a brownie was going to turn out but it came out FAN-FREAKIN’TASTIC!  It’s like eating a cherry cheesecake with a brownie crust…….now, how heavenly does that sound?

Valentine’s day is coming up and this would be the perfect little treat for your kiddos or for your significant other!  I garuntee these own’t even last 2 days…..they barely made it passed the first day!

1 1/2 sticks of butter

4 1/2 oz of dark chocolate (chopped)

1 1/2 cups brown sugar

1 1/2 tsp vanilla

3 eggs

1 cup of flour

1/3 cup of unsweetened cocoa powder

1 tsp salt

Cheesecake topping ingredients:

12 oz softened cream cheese

3/4 cup sugar

1 egg

1 tsp vanilla

1/2 can of cherry pie filling



Preheat oven to 350°

Line a 9 inch brownie pan with non stick foil and lightly spray with cooking spray.  Set aside.

Melt chocolate and butter over a double boiler until melted and mixed well and smooth.

Stir in brown sugar and vanilla, then remove fro boiler and whisk in eggs quickly and mix well.

Add flour, cocoa and salt.  Mix well.

Pour batter into prepared pan.

Directions for cream cheese topping:

Cream softened cream cheese, beat in sugar, egg and vanilla.

Scatter tablespoon of cream cheese mixture on top of the brownie batter, then scatter tablespoons of cherry pie filling over the top.

Run the tip of a knife through the topping and pie filling to get marbled look.

Bake 40-50 minutes or until edges of cream cheese are slightly browning.  Center will still be a bit jiggly even when brownies are done, that’s ok.  DON’T OVER COOK!

Cool brownies on a wire rack, once cooled place in the fridge for 4 hours before cutting and serving.
