Lemon Herb Chicken

 

 

Once the holidays are over everyone seems to want to get healthy.  Everyone has had too many cookies, cakes, mashed potatoes, candy and the list goes on!  The holidays are a lot of work and a TON of calories!  You think you would burn off all those dang cookies with all the running around you do…..sheesh!  But we don’t, so January comes and you feel bloated and well like you gained a few pounds!  So we try to eat healthy and exercise…..but who wants to eat healthy food?  Because healthy food is…..ummm….GROSS!!!!  Right? WRONG!  Healthy food can be tasty and packed with fresh spices and flavors!

Chicken is one of the easiest meats to cook with and you can’t go wrong when making chicken!  This dish is super easy and packed with BIG flavor!  It’s such a great meal for after the holidays because it’s super light and the best part?   Not a ton of clean up!  Now who doesn’t love that?!?

Put away those stretchy pants and get out those skinny jeans……  😉

 

Ingredients:

3 boneless skinless chicken breasts

4 tbsp butter

1/3 cup chicken broth

3 tsp fresh parsley (chopped)

2 tsp fresh time (finely chopped)

1 lemon (juiced)

 

Directions:

Remove and fat that may be on the chicken.  Once you have removed the fat, butterfly the chicken breasts (slice down the middle making sure not to cut all the way through.  Chicken should stay in once piece).  Once you make a slice into the chicken (about 3/4 of the way through) flatten chicken breast so that it looks like one even piece.

Salt and pepper to your liking.

Heat butter in pan on medium high heat.

Once the butter is completely melted and bubbling, place the chicken in the pan and cook for about 3-5 minutes on each side.

Remove the chicken and place on a plate and set it aside.

Remove the pan from the heat and add the broth and the herbs into the pan and squeeze the lemon juice over it.

Use a wooden spoon to scrape up all of the brown bits then return the pan to medium hight heat.

Bring to a simmer, stirring and return the chicken to the pan and cook for 4 minutes on each side.

Place the chicken on a plate and pour the mixture from the pan over the chicken.
