Yeah, the title says it all, can it really get any better than fried cheese? These puppies are super yummy! There is just something about melty, salty cheese, with a crunchy outer shell……just perfection!
I can remember as a kid, going to our favorite diner and always ordering mozzarella sticks….ALWAYS! It used to make me mad that you would only get 6 and you would have to share with the 3 other people in your family, so each person would get one and the other 2 would have to split between whoever wanted them! Ugh…..dilemmas from back in the day!
This fried cheese is even better than those mozzarella sticks I once fought over! Fresh mozzarella covered in light crispy bread crumbs…..gluten free bread crumbs!!!!
The best thing about these cheesy, gooey bites…….YOU DON’T HAVE TO SHARE! 😉
16 oz fresh mozzarella log (I use Belgioioso)
1 cup gluten free panko bread crumbs (you can find this by the other gf items in the healthy section at your local grocer)
2 tsp dried parsley
1 tsp dried thyme
1/2 tsp pepper
2 eggs beaten
1/2 besan or chick pea flour (this will be with the health food as well)
1/4 cup olive oil
Slice cheese into 1/4 inch slices (keep cheese in freezer until your ready to fry, this will keep it from melting into a huge mess)
Heat oil in pan.
Mix breadcrumbs, thyme, parsley, salt and pepper in a medium bowl.
Dredge cheese in flour then egg wash then bread crumbs.
Fry on each side for 2-3 minutes or until golden brown.
Let cheese drain on paper towel for a few minutes.
Serve with your favorite marinara sauce.
