Bailey’s Fudge


Bailey’s is a tradition in my house.  The hubby and I enjoy, around 15-20 glasses of Bailey’s during the holidays!  It’s our Christmas poison!  Fudge is another big Christmas staple for us!  So…….I mixed the two together!  BOOM!  Perfection!

This is a super easy recipe that will have ALL of your friends and family begging for the recipe!  I know that Bailey’s is on the pricey side, but DON’T substitute with a cheaper Irish cream, it won’t come out the same!  Trust me!  You will be glad you dug deeper in your pockets to get the good stuff!


3 cups semi sweet chocolate chips

1 cup white chocolate chips

1/4 cup butter

3 cups powdered sugar

1 cup Bailey’s

Ingredients for top layer:

1 1/2 cups semisweet chocolate chips

1/2 cup white chocolate chips

4 tbsp Bailey’s

2 tbsp butter



Butter 8X8 or 9X9 pan

Melt 3 cups of semi sweet chocolate chips, 1 cup of white chocolate chips and 1/4 cup butter in a double boiler, until soft.

Stir in powdered sugar and Bailey’s, stir until smooth.

Pour mixture into buttered pan.  You can place a piece of plastic wrap down on top of the fudge to create smooth top.  Refrigerate.

Now melt remaining 1 cup semi sweet chocolate chips and 1/2 cup white chocolate chips in a double boiler.  Once chocolate is melted, remove from heat and mix in 2 tablespoons of butter and 4 tablespoons of Bailey’s.  Spread over cooled fudge and if you want a smooth top place plastic wrap down on top.
