It’s the most wonderful time of the year!!!!! 🎤 Just kidding, just kidding!!!! I’m definitely NOT ready for Christmas yet! But I am ready for lots of yummy holiday food!!!! Especially turkey with all the trimmings. Thanksgiving is such a great time, because you have a whole bunch of different food to pick from. Then you get pie!
This is a great recipe that allows you to have some of the yummies from Thamksgiving without all the work! This meal is still a feel good, get in my belly meal without being in the kitchen all darn day! And it’s not as heavy as your Thanksgiving day meal. Plus it has homemade cranberry sauce, who doesn’t love that?

1 lb ground turkey
1 cup frozen carrots
1 cup frozen green beans
2-3 large sweet potatoes
1/3 cup flour
1 cup chicken or turkey stock
pinch of salt and pepper
1/4 cup heavy cream
1/2 cup brown sugar
2 tbsp butter
Ingredients for Cranberry Sauce:
1 12 oz bag of fresh cranberries
1 cup apple cider
3/4 cup brown sugar
3 tbsp orange juice
Peel sweet potatoes and cut into small chunks. Place potatoes in pot with cold water. Boil potatoes until you can easily poke them with a fork.
Once potatoes are cooked, mash with 2 tbsp butter and 1/2 cup brown sugar. If you like smooth potatoes whip them with an electric mixer. I just used a hand masher because I like a little texture with my taters.
Once potatoes are mashed set them aside, covered.
Preheat oven to 350°.
Cook ground turkey in a medium to large pan. Once turkey is fully cooked add flour and cook for 1 minute. Add stock and stir constantly for 2 minutes, then add cream. Stir until thickened and gravy forms.
Add vegetables (I used green beans and carrots because I know everyone likes them and will eat them, but you can use any veggies you prefer) cook for a few minutes until everything is well coated in the gravy. Add a pinch of salt and pepper.
Add turkey and vegetable mixture to 9X13 baking dish. Spread potatoes on top of turkey mixture.
Bake in 350° oven for 30-45 minutes, or until sweet potatoes become a little stiff.
Directions for Cranberry Sauce:
While the pie is in the oven, make this yummy cranberry sauce.
Add cranberries to a medium sauce pan along with apple cider, sugar and orange juice. Mix together.
Cook on high heat until mixture begins to boil and the cranberries begin to pop.
Lower heat to medium low and continue cooking until juice is thick, about 10-15 minutes.
Turn off heat. Put cranberry sauce aside, covered until ready to serve.
Once pie is done, serve each piece topped with a tablespoon or two of the warm cranberry sauce.
