One of my new favorite things is BACON! For the longest time I tried to convince myself I didn’t absolutely love bacon. Well…..that didn’t work, it was all lies! 😜 Bacon pretty much makes any dish that it’s in.
You really can’t get any better than Mac and cheese with bacon! The last time my family and I sat down and had this for dinner, I looked at my hubby and uttered my love for this meal, saying ‘This is what you want when you’ve had a crappy day.’ And it is! This is a big time favorite comfort meal! It’s great for a cold winter’s night supper or the perfect medicine for a long day. It’s just the kind of food that makes you feel good when you eat it. The kind of food that you try to savor as long as you can and are disappointed when it’s gone.
So whether you’ve had a bad day or you just want the deliciousness of a comfort meal this Mac and cheese is PERFECT!
5 tbsp butter
1 lb pasta
8 oz shredded cheddar
8 oz shredded smoked cheddar
4 oz cream cheese
2 cups milk
1/2 cup breadcrumbs
3 jalapeños seeded and chopped
1 lb bacon cooked, drained and chopped
more shredded cheddar for sprinkling on top
Preheat oven to 350°
Cook bacon and drain. Once the bacon is cool give it a rough chop and set aside.
Cut and scrape out seeds to jalapeños (use a spoon to scrape out seeds to avoid getting burns from the peppers) Roughly chop peppers and set aside.
Cook pasta a little less then the time on package. (Pasta will cook more in the oven.)
In a heavy bottom pan melt butter, once butter melts add milk, stir constantly for about 5 minutes. Add in your cheese. Stir constantly so cheese doesn’t burn and cream cheese melts.
Once cheese is melted mix cheese, pasta, jalapeños and bacon together. Make sure pasta is generously coated with cheese. I make sure to keep the jalapeños on one side, because my kids don’t dig the kick of heat. 😉
Pour mixture into baking dish and sprinkle a little more cheese on top along with bread crumbs.
Bake for 30 minutes until top is golden brown and cheese is bubbly.
