Coconut Crusted Chicken Strips




I’m forever trying to make things I think my picky 4 almost 5 year old will eat.  He doesn’t like fish (my favorite) and he doesn’t like overly spiced food (my hubby’s favorite).  So it’s tough finding things I know he won’t turn his nose up at.  He’s come a LONG way though!  He NEVER used to eat veggies. And now I can get him to eat most of them, except for the ‘weird’ ones like asparagus and Brussels… 😆 So I came up with a recipe that I was 99% sure he’d love and the rest of us would love too!  It’s simple and mostly healthy and doesn’t take all day to prepare or to cook!  That’s ALWAYS a bonus!




3-4 skinless boneless chicken breasts

1/4 cup milk

1 cup sweetened coconut flakes

salt and pepper



Preheat oven 400°

Mix together the bread crumbs and coconut.

Cut chicken into strips or nuggets (Whichever you prefer) and sprink them generously with salt and pepper and give them a good toss until they are coated well.

Dip chicken in milk, then dredge in bread crumbs and coconut mixture!

Place chicken on lined baking sheet (I lined mine with non stick foil but you can line it with a silicone mat too)

Spray the top of the chicken with cooking spray (lightly) this will help the chicken to brown.

Cook in preheated oven for 15 minutes or until top is browning.  Then turn each piece over and spray the top with cooking spray.  Cook for additional 15 minutes or until brown.  Serve immediately with your favorite dipping sauce!
