How awesome are these?!? I love trying to find creative and festive Halloween treats that I can tweak to make my own!
These are super cute! I wanted to make these scream Halloween. So, I colored the cupcakes and the icing! I used the neon food coloring because it gives you those bright Halloween colors. You can always use the canned frosting, but it’s super easy to make your own too! And it tastes so much better! I also used my absolute favorite vanilla cupcake recipe (the same one I used for the cannoli cupcakes). It’s spongy and just melts in your mouth. 😍
Make these for your next Halloween party and they will surely be gobbled up by your little goblins. 😉
Ingredients for the cupcakes:
1 1/4 cups of cake flour
1 1/4 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 large eggs
3/4 cups sugar
1 1/2 tsp pure vanilla extract
1/2 cup vegetable oil
1/2 cup buttermilk
package of neon food coloring
Directions for cupcakes:
Preheat oven to 350° and line your cupcake pan with liners (Halloween if you can find them).
In a medium bowl, whisk together flour, baking powder, baking soda and salt. Set aside.
With an electric mixer beat eggs on medium speed. Add sugar and continue to beat mixture on medium speed. Add vanilla and oil and continue mixing on medium speed. Mix until combined. Once combined reduce mixer to low speed. Slowly add about half of the flour mixture and then half of the buttermilk. Mix until just combined. Add remaining flour and buttermilk, beat until well combined, scraping down the sides of the bowl. Batter will be thin, don’t panic! Separate the batter evenly into 3 bowls. Color one green, purple and orange. Fill cupcake liners 1/2 way full.
Bake 12-14 minutes or until toothpick inserted comes out clean.
Let them cool in the pan for 3-5 minutes then transfer them to cooling racks to cool completely.
Ingredients for icing:
2 cups of powdered sugar
2 tbsp milk
2 Tbsp butter
1/2 tsp vanilla
Package of neon food coloring
Direstions for icing:
Combine sugar, butter, milk and vanilla. Beat with an electric mixer on medium speed, until smooth.
To decorate cupcakes:
Evenly separate icing into 3 bowls. (You can use one color but I did 3 to make them more festive 😊)
Mix one green, one purple and one orange. (To make the orange it’s 8 drops of the green coloring and 3 drops of the pink….you can find the instructions on the back of the food coloring box). *These directions are just for the neon colors, NOT the regular colored food coloring.*
Once the icing is all mixed, spread each cupcake with a different color icing.
Using the gel, pipe 3 circles on each cupcake. (It will look like a bullseye)
Then gently drag a tooth pick from the middle or smallest circle towards the outer edge. Repeat all the way around the cupcake. Be sure to use clean tooth picks each time or clean the one your using after each line.
