Chicken Caprese

It’s Late August and it’s still humid and hot….the kids started or are starting school soon and you need a quick, light and easy dinner. Buuuuut you don’t feel like cooking it’s too dang hot!  No worries, just fire up your grill and grab a nice refreshing glass of sangria. This is a super easy recipe that’s perfect for those hot summer nights when you just don’t feel like cooking a huge meal. Because let’s face it who wants to eat and cook some heavy meal when you’re tired and hot.   And who can afford to eat out all the time?  This is a great little meal when you just don’t feel like making a huge dinner. Plus….. IT’S HEALTHY!!!! 😉

Chicken Caprese

Ingredients:

2  Skinkess/bonelessChicken Breasts or 4 thin sliced chicken breasts

2 tomatoes sliced thin

4 slices of fresh mozzarella

4 fresh basil leaves

4 tbsp balsamic vinegar

Directions:

Slice the chicken in half (thin) so you have 4 pieces unless you’re using thin breasts.  Season both sides of the chicken with salt and pepper. Grill chicken on both sides for 10-15 minutes (depending on thickness)  or until juices run clear and chicken is thoroughly cooked.

While chicken is grilling slice tomatoes and mozzarella and set aside.  Once chicken is done remove from grill and let stand for 5 minutes.

To serve place tomato and cheese a top the chicken and then lightly drizzle with the balsamic vinegar.
